1. Preheat the oven to 350 degrees F. Line a couple baking sheets with parchment paper or silicone baking mats.In a large bowl or stand mixer, beat 1 cup butter until is is smooth and creamy, making sure to scrape down the sides and bottom of the bowl.Add 1 cup sugar and 1/2 cup brown sugar.
2. Cream (this means beat) the mixture for 1-2 minutes on medium speed, stopping to scrape the sides and bottom of the bowl.
3. Once the mixture is light and fluffy, move on to the next step.Add 1 teaspoon vanilla extract and 2 large eggs.
4. Beat into the butter mixture, scraping the sides and bottom to make sure it's all incorporated.Add 3 cups of flour (spooned and leveled) but don't mix it in yet.Add 1 and 1/2 teaspoons baking soda, 1 tablespoon cornstarch, and 3/4 teaspoon kosher salt on top of the flour.
