To prepare this main dish recipe, take a chopping board and cut the potatoes, onions, tomatoes and brinjal into bite-size pieces. Once done, put the potatoes and brinjal in a large bowl with salted water in it. Now, take a grinder and grind the chopped onions and tomatoes separately to prepare the puree and keep aside till required.
2. Now, place a deep-bottomed pan on medium flame and add oil in it. Once the oil is hot enough, add cumin seeds in it and let them crackle for a few seconds. Next, add asafoetida and ginger-garlic paste to it and saute for a few seconds, till they turn aromatic. Then, add onion paste and saute for a few minutes, until the raw smell disappears. Now, add the tomato paste in the pan and cook for a few minutes.
3. Now, add coriander powder, turmeric powder, garam masala powder and red chilli powder to the pan and mix well. Saute till the oil starts leaving sides of the pan. Then, drain off the water from the potatoes and brinjal and add them to the pan. Saute well with the masala for 2-3 minutes. Cover the pan with a lid and cook on low flame for another 2 minutes.
4. Next, add water to the pan and stir well. Cook covered for another 10-15 minutes, until the potatoes and brinjal are cooked properly. Once done, transfer to a serving bowl and garnish with chopped coriander. Serve hot with roti or paratha to enjoy!
