1. WET INGREDIENTS: In a small bowl, stir together the 1/2 cup + 1 tablespoon almond butter and 1/4 cup honey. Add the 1 teaspoon vanilla extract and 1/8 teaspoon fine sea salt. Stir until smooth.
2. OAT FLOUR: Add old fashioned oats to a blender or food processor. Pulse or blend until the oats resemble flour with no big chunks of oats. Remove from the blender and measure (measure AFTER being blended).
3. DRY INGREDIENTS: Add the 1/2 cup Rice Krispies cereal, 1/4 cup oat flour, and 1/2 cup old fashioned oats to the wet ingredients. Gently stir until combined and let stand to absorb the liquid and soften the oats for about 5-10 minutes. While it's sitting, begin prepping the fruit by washing and thoroughly drying(slice or chop as needed).
4. FINISH TART SHELLS: If the mixture is too wet, add in some more oat flour and if it's too dry, add a bit more almond butter or honey. Form balls with the dough, compressing the dough in your hand tightly. Once you have a ball shape, press your thumb in the middle of the ball and then gently form a tart shell by pinching the edges of the shell. Place shells on a plate or tray lined with parchment (they'll stick a little without the parchment paper).

1. Preheat the oven to 350 degrees F. Fill a mini-muffin tin with mini-cupcake liners.
2. Add the graham crackers and almonds to the bowl of a food processor. Process until the mixture forms fine crumbs, 15 to 20 seconds. Add the butter and pulse until incorporated. Place 1 tablespoon of the crumb mixture into each lined muffin cup and use your fingers or a shot glass to gently press down the mixture. Bake for 8 minutes, rotating the muffin tin halfway through, until the crusts are firm.
3. Add the chocolate chips to a medium bowl. In a small saucepan, whisk the cream and honey together over low heat until the honey has dissolved. Increase the heat to medium and bring the mixture to just below a boil. Pour the hot cream over the chocolate and whisk until the mixture is smooth. Pour 1 tablespoon of the chocolate filling into each muffin cup. Refrigerate for at least 2 hours before serving.

3. Process 2 cups of the slivered almonds and the sweetener in the food processor for 5 minutes, scraping down the sides occasionally. Add the egg whites and almond extract. Process until it comes together and is about the consistency of peanut butter. Spread onto the prepared crust using wet hands. Sprinkle the slivered almonds on top and press down lightly.
4. Bake for 20 minutes until slightly golden and firm to the touch. Cool completely before removing the sides of the pan. Serve with fresh berries or jam.
