Adobong Sitaw is a vegetable-based type of Adobo. Usually, it is either Adobong Manok or Baboy with a little vegetable add-on, but this time, the main cast is the vegetable itself. You might be doubtful whether it can pull off the desired balance of flavor, but the bland taste of string beans blends perfectly with spices and ingredients of Adobo.
Let’s adobo some veggies! You’ll need long beans (sitaw), soy sauce, cane vinegar, garlic, and onion. Not pictured: chili flakes, salt and pepper. Saute the garlic and chili flakes in about 1 tbsp of vegetable oil for a minute, until fragrant. Add in sliced onions and saute a few more minutes, until the begin to soften. Add in the long beans.
Sitaw cooked in adobo sauce is a great side dish with steamed white rice or paired with fried fish. String Beans – Or yard long beans can be substituted with Baguio beans or green beans. Pork Belly – To give it a meaty taste but is entirely optional and can be skipped if you want to make it vegan.
