1. Heat oil in a pan. Sauté the chopped ginger until light brown. Add the chopped onions and minced garlic. Sauté. Add the chicken liver. Sauté until water comes out and becomes light brown. Cook until the water is reduced. Add the ground black pepper, oyster sauce and soy sauce. Stir a little until combined.
2. Add the vinegar. Cover and simmer for 5 minutes under medium heat. [Optional] Add the sugar and stir gently. Continue cooking until the sauce is reduced.
3. If you prefer dried adobo, cook until the sauce dries up. If you want saucy adobo, separate the sauce from the chicken liver then put the liver back to heat. Sauté for 2 to 3 minutes until browned. When fully cooked, place the chicken liver back to the sauce.
4. Serve with rice and enjoy.
