Slowly sprinkle in the xanthan gum or add in the tapioca/water mixture. Be sure not to dump in the xanthan gum or it will clump! Stir until thickened. Remove from heat, stir in the vanilla, and set aside.
3. Preheat the oven to 375 degrees.
4. Pour the filling evenly into the bottom crust. Then, add the top crust.
