Once melted add in the remaining ingredients and bring to a low simmer for 20 minutes until the mixture is slightly thickened. Whisk in the xanthan gum and continue to cook another minute until thick. Remove to a bowl and let cool.
4. Press half of the dough into the skillet and bake for 12-15 minutes. Remove from oven and let cool 5-10 minutes before adding the filling to the crust. Sprinkle the top with the brown erythritol.
