1. If using a frozen duck, be sure to thaw your duck for 2-3 days in the refrigerator before preparing. Once your duck is completely thawed, remove the giblets and neck as well as any packaged orange sauce that may be in the body cavity. Rinse with cold water then pat completely dry with paper towels. Set the duck out for 30 minutes to warm to room temperature.
2. Preheat your oven to 425 degrees F (218 degrees C) while the duck is setting out.
3. Use a sharp knife or the tines of a fork to pierce the duck skin in small slits or crosses (in a diamond pattern). *Do this carefully, as you don't want to pierce the duck meat! Lift the skin away to help avoid peircing the meat.For a great even cook on your duck, there are two things to note. 1) It is best not to stuff the body cavity with onion or citrus for flavor. This reduces the air flow and adds cooking time. 2) If you're not worried about the presentation or tying the legs crossed, you can make slits into the leg joints between the body and the thigh to ensure that the duck cooks quickly and evenly.
4. Grind your fennel seeds if needed, then blend all of the seasoning mix ingredients: salt, pepper, cinnamon, fennel. Rub onto all surfaces of the duck skin.

1. Adjust oven rack to the lower third. Preheat oven to 120 C (250 degrees F). Line a baking pan with aluminium foil (for easy cleanup) and top with a V-rack.
2. Prepare a plate. Transfer the giblets from the duck to the plate. Use a pair of poultry shears to remove the duck neck and trim the neck skin. Do not trim any skin from the bottom of the duck, because it will keep the meat moist during roasting. Save the duck neck for making sauce or stock. Save the giblets for cooking or making stock.
3. Place duck on a working surface or a cutting board. Stuff citrus inside of the duck, using as many fruits as you can. Use a few toothpicks to seal the bottom of the duck, to secure the fruits inside.
4. Use a sharp paring knife to score the duck breast, about 1 cm (⅓ inch) apart. This will help the duck render fat faster and create a crispy skin. If you’re not familiar with this process, I suggest you start slow. The thickness of duck skin is not consistent. You need to avoid slicing through the meat, which will cause the duck to lose moisture. Gently press the knife. You might need to slice a few times to get the cut just right. (*see footnote 1)

1. Preheat oven to 350 degrees F. Line a large roasting pan with foil.
2. Remove both wingtips at the top joint with kitchen scissors or a heavy knife; reserve wing tips. Reserve neck (discard the rest of the giblets). Trim the excess skin and fat around the neck and cavity opening. Grate 1/4 teaspoon orange zest and set aside. Cut oranges into quarters. Set aside 3 sections and place the remaining orange sections inside the duck; fold the wings under and tie the legs together with kitchen string. With a skewer or fork, prick holes in the skin without piercing the flesh. (This allows fat to drain during roasting.)
3. Whisk marmalade and 2 tablespoons soy sauce in a small bowl. Loosen the skin over the breast and thigh meat and rub about 3 tablespoons of the marmalade mixture under the skin. Place breast-side down on a rack in the prepared roasting pan.
4. Roast the duck for 1 hour. Remove the duck from the pan and carefully pour off the fat. Return the duck to the rack, breast-side up. Continue roasting, basting every 15 minutes with another 2 tablespoons of the marmalade mixture, until an instant-read thermometer inserted into the thigh without touching bone registers 165 degrees F, 1 to 1 1/4 hours more.
