This is optional; the duck can go directly in the bottom of the slow cooker and the recipe will come out just fine. The meat will just cook in more duck grease. One thing to note is that a lot of a duck’s fat is actually in the skin. One way to cut back on your fat intake is to remove the skin after it’s done cooking.
As an added bonus, you can render any excess duck fat that you cut out. Just slice it into small pieces. Then put it in a pan with some water. Don’t worry about the water, it will cook out. Simply heat the fat for an hour or so on medium heat until the fat has melted and the crispy pieces of skin are left over.
This duck is roasted and glazed with olive oil, garlic, habanero pepper, honey, rice wine vinegar, and coconut aminos. Simple pantry ingredients make an easy dinner.
