1. Butter an 8-inch square baking pan and then line it with parchment paper, letting the ends of the parchment paper drape over two opposite sides of the pan. Butter the parchment paper as well.
2. Whisk the raspberry preserves in a small bowl to loosen it and then transfer it to a zipper sealable plastic bag. Set it aside.
3. Combine the sugar, evaporated milk, butter, marshmallow cream and salt in a medium saucepan and bring the mixture to a boil. Cook for 5 minutes, stirring regularly.
4. Remove the pan from the heat and stir in the white chocolate chips. Stir until the chocolate has melted and then stir in the vanilla extract and half of the pistachios.

1. Lightly grease and line a 20cm (8in) square shallow cake tin.
2. Place 400ml (14floz) double cream, 125ml (4floz) milk, 125g (4oz) butterand 600g (1lb 5oz) sugar into a large heavy based pan. Place over a low heat to heat gently stirring constantly until combined and all the sugar has dissolved.
3. Increase the heat and while still continuing to stir constantly bring to the boil then boil until the mixture reaches 116℃ / 241℉ (soft ball stage).
4. Once the required temperature has been reached, remove the pan from the heat and leave it undisturbed to cool down to 110℃ / 230℉. This will only take a couple of minutes.

1. Line the base and sides of an 8” (20cm) square cake tin with baking paper. I use two long strips (see post for more info) letting the paper overhang on the sides so the slice can be lifted out easily.
2. Place condensed milk and butter in a large, microwave safe bowl or jug. Microwave on high power for 1 minute, then stir. Continue microwaving in 30 second bursts, until butter is melted. Stir in the chopped white chocolate. Microwave on medium power in 30 second bursts until the chocolate is melted.
3. Mix with a handheld electric mixer for 1 - 2 minutes or until slightly lighter in colour and beginning to cool down. You can skip this step if you don’t have a mixer (or can’t be bothered cleaning the mixers) - just leave the mixture for a few minutes to cool.
4. Lightly crush the biscuits. I just do this with my hands as the ones I use crush easily, but you can put them in a plastic bag and bash them with a rolling pin if you prefer. Add the crushed biscuits and white chocolate chips to the mixture and stir. Add the raspberries and mix again until everything is evenly distributed.
