2. In medium bowl, mix carrots, oregano, and spaghetti sauce together. Set aside.
3. In large bowl, mix eggs and Ricotta well. Add spinach and blend thoroughly. Set aside.
4. Spread 1/2 cup sauce in bottom of prepared baking dish. Layer 3 lasagna noodles, 1/2 remaining sauce, 1/2 Ricotta mix, 1/2 sliced zucchini, 1/2 chopped onion, 1/2 sliced mushrooms, 1/2 mozzarella, 1/2 Parmesan. Repeat layers and bake in preheated oven for approximately 45-55 minutes until bubbly. Remove from oven and let rest at least 15 minutes. Cut into 8 portions and serve.

Layer on ⅓ of the lasagna noodles, snapping some to size as needed to fit into your pan. Then layer - ⅓ of the bechamel, half of the veggies, ⅓ of the cheese, and 1 cup of tomato sauce. Top with ⅓ of the lasagna noodles.Repeat for the second layer - ⅓ of the bechamel, second half of the veggies, ⅓ of the cheese, and 1 cup of tomato sauce. Top with ⅓ of the lasagna noodles.For top - Spoon on remaining bechamel, remaining tomato sauce, and sprinkle on remaining cheese.
4. Bake: Covered tightly with aluminum foil, for 35 to 45 minutes, or until bubbling at the edges. If desired, remove foil and broil for 2 to 3 minutes, until the top is golden brown.
