1. Start by bringing 350-400ml of water to a boil in a small pot. In another pot, bring water to a boil for the noodles.
2. In the meantime, add the vegan mentsuyu, mushroom stock powder, salt, pepper, sesame seeds and scallion oil to a warmed bowl and whisk to combine.
3. Once the water for the noodles begins to bubble, add in the agar agar and whisk for a few seconds. Once the water is heated, add it to the noodle bowl and stir. By now the water for the noodles should be boiling so drop them in and cook for the amount of time recommended on the packaging*.

3. If using agar (I would do this with step 1 to save time), bring 350-400ml of water to a boil and dissolve agar. Remove from heat and add to the bowl with the sauce and stir. If not using agar, you can simply add in hot water from a kettle directly to the bowl.
4. Once noodles are finished cooking, strain and add to the soup. Add your favourite ramen toppings and enjoy!
