1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, celery, carrots and zucchini and saute for 5-10 minutes, until the vegetables are a bit tender.
2. To the pot, add the diced tomatoes and their juices, vegetable broth, dried herbs (oregano, thyme, basil), white beans, kidney beans, green beans and pasta. Stir. Bring to a boil, then lower heat the heat and simmer for 10-15 minutes, until the pasta is cooked.
3. Stir in the spinach and let it wilt. Season with salt and pepper to taste.
4. Serve with a loaf of crusty bread, if desired, and sprinkle each bowl with a little fresh parsley and vegan parmesan.

1. Heat the oil in a large pot or dutch oven over medium heat. Add the chopped leek, carrot, celery, zucchini, and salt. Cook, stirring often until the vegetables have softened and turned slightly golden, about 5 minutes. (You could also sauté the veggies in a skillet, then transfer to a pot as I did in the step-by-step photos above).
2. Add the garlic, oregano, and thyme. Cook for a further minute until fragrant while stirring frequently.
3. Pour in the strained and diced tomatoes with their juices, and broth. Add the bay leaves, smoked paprika, vegan parmesan (if using), and maple syrup. Season with black pepper and a pinch of chili as desired.
4. Bring the mixture to a boil, then add the pasta and cover the pot with a lid, leaving about a small gap for steam to escape. Reduce the heat to a gentle simmer and cook for 10 minutes.
