1. Bring the almond milk and the cream to a simmer in a heavy medium saucepan. Remove from heat. Whisk egg yolks in a large heat proof bowl. Add the sweetener and whisk until blended.
2. Gradually whisk the hot cream mixture into the egg yolks. Be sure to add it slowly and whisk vigorously to keep the egg yolks from cooking. Return the mixture to the saucepan. Cook mixture over low heat, stirring frequently, until it reaches a temperature of 165- 170º Fahrenheit. Whisk in the glycerin and vanilla extract.
3. Cool mixture completely, stirring occasionally. I like to place the pan in a large mixing bowl of ice to cool the mixture quickly. Alternatively, you can allow it to cool at room temperature for 20 minutes, then refrigerate until chilled.
4. Pour cold mixture into an ice-cream freezer and freeze according to manufacturer's instructions. When ice-cream reaches the desired consistency, transfer to a freezer-safe container with a lid.

1. The day before, freeze ice cream container according to your ice cream maker’s instructions. Here is the ice cream maker that I use.
2. Add all ingredients except vanilla bean pod into a food processor.
3. Slice the vanilla bean pod down the center, lengthwise. Scrape the beans cleanly out of the pod and add to the food processor. Save the pod for another recipe.
4. Cover the food processor and blend until smooth and well mixed. Scrape down the sides of the processor as needed.

1. Place the bowl of your ice cream maker in the freezer and freeze overnight. Note: if you don't own an ice cream maker, no big deal! You can still make this recipe.

Serve immediately for soft serve consistency or for an ice cream consistency, transfer to a sealable container and freeze for at least 2 hours. Note: if you don't own an ice cream maker, simply transfer the base to a freezer-safe container and freeze 4 hours or until completely frozen.
