Tzatziki is a traditional Greek dip made from yogurt, cucumber, dill, garlic and lemon. To be honest it's fairly low carb to start with, but I've made it extra low carb by increasing the ratio of cucumber to yogurt, and reducing the lemon juice.
There are two main components to this Tzatziki Salad: the cucumber, and the yogurt. Thinly slice the cucumber (using a mandolin slicer to make it even easier). We’ll combine everything else to form a yogurt-garlic sauce. Then just throw it all together and serve! Summer salads have never been so refreshing.
For a dairy free tzatziki, ditch the yogurt and use mayonnaise. If you don't have fresh garlic, go ahead and use minced garlic from a jar or garlic powder.
