In a small bowl, stir 1 cup Cool Smoke Barbecue Sauce together with ¼ cup honey and 2 teaspoons apple cider vinegar and set aside. Cut 2 (18 x 24-inch) lengths of foil to wrap each rib rack in a tight package. When the ribs have cooked 2 hours, transfer them from the grill and place each rack meat-side-down on the foil.
First pull up the long sides of the foil, then roll up the edges and secure tightly to avoid leaking. Repeat wrapping with another piece of aluminium foil. Place wrapped ribs on the grill for 1 hour, lid down, until fully cooked through, flipping every 20 minutes. When the ribs are ready, remove from the grill.
Just place your ribs in a 6 quart slow cooker, mix up your sauce ingredients (full printable recipe below) and pour on top. Cook for 6-8 hours on low or until they are super tender. Then throw your ribs on a lined cookie sheet and broil for a few minutes or carefully grill.
If you want to try this in the oven, rub the short ribs with the bbq seasoning and place in a baking dish. Cover with aluminum foil and bake for 3 hours in a 300 °F oven. Take off the foil for the last 1/2 hour.
