Separate the egg white from the yolk and place it into 2 separate bowls. Whisk the egg white until it forms stiff peaks. In the other bowl, combine egg yolk, vanilla, sweetener, and salt and whisk until pale in color and thick in texture. Add mascarpone to the egg yolk mixture and whisk to combine.
Whip heavy cream. Add vanilla, sucralose, and espresso powder and whip a bit more. Blend whipped cream & cream cheese mixture making sure it is thoroughly combined. Place first crêpe on a 7"-8” plate. Spread thin layer of mixture to cover crêpe. Put another crêpe on top & repeat until finished.
