2. Or use your fingers to coat it with a bit of butter.
3. You can use parchment paper if you want but I actually found that it wasn't necessary.Add the 1 and 1/2 cups butter to a HEAVY 3 quart saucepan. (You need good quality pots for candy-making.)Melt the butter over medium heat until almost melted, then add the water, sugar, and salt.
4. Be sure to add the sugar to the CENTER of the melted butter (see photo).

1. Line a baking sheet with foil. If you'd like to have nuts in your toffee, toss a handful of almonds onto the baking sheet. Set aside.
2. Heat all of your ingredients (except for the nuts and chocolate) in a nice sturdy saucepan on med heat until butter is melted. Turn temp up to med-high and stir constantly until mixture comes to a boil.
3. Set your timer for 5 minutes and DO NOT let ANYTHING disturb you while you stir. You must keep stirring your butter/sugar mixture so that it does not burn. And you must use a WOODEN spoon.
4. Keep stirring until your timer goes off. It may even smoke a tiny bit and that is ok. If you are really concerned, lift you pan off of the burner (while you are still stirring) to remove it from the heat, but still stir until your timer goes off.

3. Once you have removed from the heat, stir continuously to ensure the butter and sugar doesn't separate. Pour into the lined pan and let sit for several minutes.
4. After several minutes, top with chocolate chips, before covering with tin foil. Let sit for 5 minutes. After 5 minutes, use a rubber spatula to spread out the toffee in an even layer.
