DirectionsStep1Wash the cauliflower with cold water and use paper towels to dry it. Remove all greens.Step2If using a box grater, cut the cauliflower into large chunks and use the medium-sized holes to grate it into pieces the size of rice. If using a food processor, cut the florets into 2-3 inch pieces, and grate the cauliflower.Step3Transfer the rice to a large paper towel or kitchen towel, squeezing to remove any excess moisture. This process will prevent your rice from becoming soggy when cooked.Step4In a large microwave-safe bowl, add cauliflower rice, diced carrots, and peas. Cover with a lid or plastic wrap and cook on high for 2 minutes.Step5Beat the eggs in another bowl, and add it on top of the cauliflower rice. (Don’t mix at this point.)Step6Cover with the lid or plastic wrap, and microwave on high for 45 seconds (the eggs will be half-cooked at this point).Step7Mix the egg with the cauliflower rice and other vegetables. Microwave for another 45-60 seconds until eggs are fully cooked.Step8Season with salt, pepper, and optional sesame oil. Mix well.Step9Sprinkle with chopped green onions. Serve and enjoy!IngredientsIngredients1 medium headCauliflower3 Large Eggs (beaten)2 cupsMixed Vegetables (fresh or frozen, I used diced carrots and peas)add Salt And Pepper½ teaspoonAsian Sesame Oil (optional)add Green Onion (chopped, optional)NutritionalNutritional152 Calories5 gTotal Fat139 mgCholesterol20 gCarbohydrate197 mgSodium10 gProteinFrom izzycooking.comRecipeDirectionsIngredientsNutritionalExplore furtherLow-Fat Main Dish Recipesallrecipes.com44 Low-fat recipes - delicious. magazinedeliciousmagazine.co.uk10 Best Low Fat Low Carb Meals Recipes Yummlyyummly.comLow Fat Recipes : Food Network Food Networkfoodnetwork.com37 Healthy Low Fat Recipes olivemagazineolivemagazine.com10 Best Healthy Low Fat Dinners Recipes Yummlyyummly.comRecommended to you based on what's popular • Feedback
