2. Once hot add the beef and with a pinch of salt and black pepper and fry until lightly browned, remove and set aside.
3. Add the vegetables and stir fry for a couple of minutes.
4. Add in the Thai paste, fish sauce, tomato paste, coconut milk and stock, and stir until all combined, then bring to a boil, reduce heat and simmer until vegetables are tender.
