This low carb Thai coconut soup is flavorful and free of sugar! Thinly slice chicken breast into ¼-inch thick strips, then cut once more to make the pieces of chicken bite-sized. In a large stock pot, combine coconut milk, broth, water, fish sauce, chili sauce, coconut aminos, lime juice, ginger, and basil.
Add chicken and noodles to the Thai soup. Slice or shred the cooked chicken and add it to the pot of broth. Simmer for a few minutes, or until you’re ready to serve. If you are adding in rice noodles, this is when you would do so.
One bite of this low carb chicken soup will remind you to slow down, making it a perfect meal for cold winter nights. This spaghetti squash soup (one of my fave keto pasta alternatives !) has all of the traditional components of a chicken noodle soup, but it’s a keto chicken noodle soup.
