1. To a large skillet, add the oil, onion, and sauté over medium-high heat until the onion begins to soften about 5 minutes; stir intermittently.
2. Add the chicken and cook for about 5 minutes, or until chicken is done; flip and stir often to ensure even cooking.
3. Add the garlic, ginger, coriander, and cook for about 1 minute, or until fragrant; stir frequently.
4. Add the coconut milk, carrots, zucchini, Thai curry paste, salt, pepper, and stir to combine. Reduce the heat to medium, and allow mixture to gently boil for about 5 minutes, or until liquid volume has reduced as much as desired and thickens slightly.

1. Heat a large frying pan and spray in the oil, add the chicken and fry for 5-6 minutes until nearly cooked through. Add the broccoli and fry for a further minute, then add the curry paste. Cook for 1 minute or two until the paste starts to release its fragrance, then add in the stock. Bring to a gentle bubble and allow to simmer for 2-3 minutes.
2. Stir in the coconut milk and mangetout and heat it through (but don’t let it come to the boil or the sauce may split).
3. Serve as is, or if you like it a little thicker you can stir in the cornflour and water mixture.
4. Serve over rice topped with lime wedges and fresh coriander.
