1. Place the coriander seeds, cumin seeds, mustard seeds, cinnamon stick, bay leaves and mace in a dry frying pan and place over medium heat.
2. Move the spices around in the pan so that they roast evenly. When the spices become warm to the touch and fragrant, remove them from the heat to cool.
3. Grind these spices with a spice grinder or pestle and mortar until you have a fine powder.
4. Now grind the garlic and onion flakes until you again have a fine powder and add this mixture to the ground spices along with the ginger powder and amchoor or citric acid powder.

1. Heat a heavy-bottomed pan on a low flame. Combine the whole spices (Cinnamon sticks, Cloves, Mace, Cumin seeds, Coriander seeds, Black peppercorns, Black cardamom, and Green Cardamom. Dry roast them on a medium-low flame for 2-3 minutes. Keep stirring and as they start emitting their aroma, take it off the fire.
2. Mix in all the powdered spices like ginger powder, Garlic powder, Nutmeg powder, dry Red food color or dry beetroot powder, and fenugreek leaves to the pan. Mix it well.
3. Set it aside. Allow it to cool. Then grind the spices to its powdered form.
4. Sieve the blended through a strainer. If there are some coarse particles left behind blend again and sieve.
