This is a half step towards salmon jerky. Instead of a brine, I salt (and sugar) relatively thick strips of salmon, then smoked them and baste them until they are a bit sturdier than my smoked salmon. This allows them to be carried along on day trips, and they’ll keep a long while in cool conditions.
All you need is an oven! I love making low-carb jerky because it's a fantastic travel-friendly snack — it lasts for months without refrigeration. Dehydration (removing water from food) helps preserve it, and using salt adds another level of protection.
Traditional beef jerky is not ideal for a clean keto diet, as it is sweetened with sugar (typically brown sugar), but there are some brands without sugar added. Always read ingredient lists to check for added sugars. That being said, some people may be okay eating the versions with sugar if following dirty keto and their macros allow it.
