1. Preheat oven to 350 degrees. Heat oil in a large, oven safe (preferably cast iron) skillet.
2. Add hash browns and onion, cooking according to directions, minus 3 minutes.
3. Sprinkle with salt and toss. Using the back of a spoon, create 3 wells and crack eggs into each one. Equally divide BBQ pulled pork in dollops around eggs. Transfer to oven.
4. Bake until egg whites are opaque, but yolks are still shiny and runny, approximately 4-5 minutes.

3. Remove pork and transfer onto a large dish; reserve all the liquid into a cup and set aside.
4. Shred the pork with two forks and put it back into the slow cooker along with about 3/4 cup of the reserved liquid and the BBQ sauce (for every 3 oz cooked pork, I used 2 tbsp BBQ sauce).
