1. Grate the zest of half of the oranges, making sure you're scraping only the bright orange part of the rind. Then, peel off and discard the thick white pith for all oranges.
2. Now, cut out the orange segments, leaving behind the white membrane that is in between them. Then, squeeze what's left of the oranges, add the juice to the segments bowl, and discard the membranes.
3. Add the orange juice, segments, and zest into a pot along with water and erythritol. Then, simmer over low heat for 15 minutes.
4. Next, blend the jam until smooth and simmer it for 15 more minutes. Then, add the starch dissolved in a little water, and stir until the jam thickens.

3. Test for "doneness" by spooning a small amount onto a chilled plate, letting it cool for 30 seconds and tilting the plate to make sure a soft gel has formed. It should move but not run off of the plate. ( If it does, cook 10 minutes longer and check again).Add vanilla after heat is turn off and the marmalade stops bubbling.
4. Let the marmalade cool completely uncovered and spoon into an air tight jar. It should last up to three months. Some sources say one year but I don't buy it.Freeze or do a water bath if keeping longer than 3 months.
