1. Turn on the grill. Preheat your grill to 450 degrees F.
2. Cook the pepper. Place the red bell pepper on the grill grates and roast for 3-4 minutes, turning frequently, until blackened across the surface. Transfer to a gallon zip top bag and close the seal. Set aside.
3. Flatten the steak. Lay a large sheet of plastic wrap on a large cutting board and top with the flank steak and then another sheet of plastic wrap. Using a meat mallet or the bottom of a heavy saucepan, pound the flank steak until it is an even 3/4 inch thickness all the way across. Remove and discard the top sheet of plastic wrap.
4. Season and begin stuffing. Season the top of the flank steak with the Beef Seasoning (or equal parts coarse salt and cracked black pepper). Lay the spinach leaves down in a single layer across the top of the flank steak.

1. Preheat oven to 425°F.
2. If you haven’t done so already, butterfly the steak by lining your knife up parallel to the cutting board and slicing through the center of the steak, stopping just before cutting it all the way through. Open up the flank steak up on the fold, doubling the original length.
3. Even out the thinness of the steak using a meat tenderizer so it’s about 1/2 inch thick. A little less thick is okay. Season with salt and pepper on both sides. Set aside on a large cutting board.
4. In a large, oven-safe skillet, like a cast-iron skillet, heat 1-2 tablespoons of olive oil over medium heat. Add the mushrooms and cook, stirring occasionally, for 5-7 minutes until softened and slightly browned. Add the garlic and cook for another 2 minutes until fragrant. Stir in the spinach then quickly remove from the heat. Spread mushroom and spinach mixture eevenly over the seasoned beef. Sprinkle with coat cheese if using.
