I t’s been a while since I wanted to test this idea of a stewed fruit recipe. These are pears, dates and dried apricots which are quickly poached in a little honey syrup that has been flavored with cinnamon, fresh ginger and orange blossom water. The result is very nice when eaten either warm or cold.
Place the apple juice, water, whole spices and wide strips of citrus rind in a large saucepan and bring to the boil. Add the dried fruit, remove from the heat and stand for two hours. Drain the fruit and set aside.
2 cups of fruit, such as cherries, nectarines, oranges, plums, apricots, strawberries, pears, etc. Peel (if desired) and chop up all the fruit. Place them in a small saucepan, along with the sweetener, and add sufficient water until the fruit is covered a quarter of the way or halfway.
Add the dried fruit, remove from the heat and stand for two hours. Drain the fruit and set aside. Return the liquid to the saucepan along with the sugar and julienne strips of lemon rind. Bring to the boil and simmer for 10 minutes or until the liquid is syrupy.
