You only want to use steel cut oats in cookie recipes if that’s what is recommended. These oats are not a substitute for others unless the recipe has been tested. Because they take longer to cook and have a different consistency if you were to substitute them your cookies probably would not come out as expected.
In a large bowl, mix together the eggs, coconut oil, maple syrup, and vanilla. Add the flour mixture, and mix to combine. Then stir in the quick cooking oats, chocolate chips, and walnuts. Use a cookie scoop or tablespoon to portion out the dough onto a cookie sheet (9 cookies per sheet).
Preheat oven to 325 degrees F. Mix together the steel cut oats, flax seed, chia, chopped walnuts and cinnamon. Mix together in a microwaveable measuring cup, the water, honey and coconut oil. Heat for one minute to melt the coconut oil. Stir the warmed water mixture into the dry oats mixture. Stir until all ingredients are wet.
