2. Preheat the oven to 350 and prep a casserole dish for nonstick.
3. In a skillet on low heat, sauté the butter with the onion until it starts to soften (a few minutes). Then stir in the flour and cook until the mixture begins to brown- for another four to five minutes, stirring.
4. Next stir in the milk and bring the mixture to a boil and then turn the heat down to a simmer. Be sure to whisk as needed to break up the clumps. Allow the mixture to simmer for about a minute and then turn the heat off and stir in the Swiss (or Gruyere) cheese until melted. You can add any desired seasonings at this time as well.

3. Pour in heavy cream, bring to a simmer, whisk constantly until sauce thickens and there are no lumps (about 10 minutes).
4. Lower the heat, add salt and pepper and onion powder and taste (adjust as needed). Add 1/2 cup of Gruyere cheese, 1/2 cup of the Cheddar cheese, and all of the parmesan and stir until melted (approximately 2 minutes).
