This succulent standing rib roast has a flavorsome garlic and black pepper crust that your guests will love! Preheat the oven to 475 degrees F (245 degrees C). Brush rib roast lightly with olive oil. Rub sea salt, black pepper, and garlic into the roast. Place fatty-side up on a rack set inside a shallow pan.
Directions. (The ribs act as a natural rack.) Using a paring knife, score the fat. Season with salt and pepper. Roast for 15 minutes. Reduce heat to 350 degrees and continue to roast, basting every 15 minutes, until it reaches a temperature of 125 degrees for medium rare on an instant-read thermometer. Remove roast to a platter.
Excellent recipe. The only variation I made to the recipe was to add a teaspoon of Garlic Powder to the rib roast before putting into the oven. Worked out great.
Let the roast stand at room temperature for at least an hour. Rub the roast all over with olive oil and the House Seasoning. Place on the roasting rack with rib side down and the fatty side up. Roast for 1 hour. Turn the oven off. Leave the roast in the oven but do not open the door for at least another 3 hours.
