1. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
2. In the bowl of a stand mixer (or using a hand mixer), beat shortening and sugar on high until light and fluffy, about 5 minutes. Beat in egg, milk and vanilla until incorporated. Turn mixer on low and gradually add in flour mixture. Mix until combined.
3. Form dough into a disk, wrap in plastic wrap, and chill for at least one hour.*
4. Preheat oven to 350 F. Line a baking sheet with parchment paper.
