After the rice has cooked, allow it to cool to room temperature. Place a wet towel over the bowl of rice to prevent it from drying out. ( If you do not want to flavor your Sushi rice, then you can just omit the Sushi Vinegar )
2. Slice the Spam. Cut the block of Spam once lengthwise right down the center. Then make another cut down the center of the already cut piece and repeat one more time until all the slices are an even thickness.
3. Cook the Spam. In a skillet over medium heat, add in a tablespoon of vegetable oil. Lay the sliced Spam in the skillet and cook for 2-3 minutes until browned. Then flip the spam over and again cook until browned. Remove from the skillet and place on a plate with some paper towels to drain any oil. Allow to cool. Set aside.
4. Make the Soy Sauce Glaze. In an unheated sauce pan pour in 3 tablespoons of the Kikkoman Less Sodium Soy Sauce and add in 2 tablespoons of sugar. Turn the heat on the Medium and continuously stir until the sugar is dissolved. Once the sauce starts to bubble and the sauce has slightly thickened, immediately turn off the heat. Pour into a bowl to cool and set aside. The whole process is quick and only takes a few minutes. Be careful not to burn the sauce. Also, the sauce will thicken up a bit more as it cools.

2. Take one nori strip and place it on the plate. Most of the strip will be hanging off the plate. Place the musubi mold on top of one of the nori strips. Fill the mold with ⅙ of the cauliflower rice and use the press to tamp the cauliflower rice down. Do not press too hard to where the water is starting to be released from the cauliflower rice. Have all 6 of the shaped cauliflower rice ready to go.
3. Cut Spam into 6 equal slices. Place in a cold, large nonstick skillet and place over medium heat. Allow the Spam to cook very slowly to allow it to get nice and crispy (this will take about 10 minutes on the first side). Turning the heat down to low if they are browning too quickly.
4. Flip the Spam and allow it to cook for 8-10 minutes on the second side. Combine the soy sauce and sweetener in a small bowl. Once Spam is crispy add the soy sauce and sweetener that has been mixed together. Move around the Spam in the soy sauce mixture and cook for 1-2 minutes or until the soy sauce has thickened and has glazed the Spam.
