1. Add the nutmeg, allspice, cloves, star anise and cinnamon to the bottom of a pot (or to a skillet for Slow Cooker instructions). Toast over medium heat for 2 to 3 minutes, stirring occasionally, until fragrant.
2. Turn the heat to low. Pour in the apple cider and bring to below a simmer, just barely bubbling. Warm for 1 hour on low heat (don’t let it simmer). Skim off any particulate if desired, or stir to re-incorporate it.
3. Place the apple cider in the slow cooker or Instant Pot (pressure cooker) with the spices. Cook on low for 3 hours OR Normal using the Instant Pot “Slow Cooker” setting.
4. If using, stir in the rum. Garnish with orange slices and cranberries, then serve.

1. Pour apple cider into a 3 1/2 quart crock pot. Add 4 or 5 cinnamon sticks. Punch holes in the orange with a toothpick and stick in whole cloves. You can add as many or few as you like. I usually just make several rings around the orange with the cloves.
2. Place the orange into the crock pot. Heat on low for about 4 or 5 hours. Remove orange and cinnamon sticks before serving. If using rum or bourbon just have guests add to their cup or glass how much they like and then add the mulled cider along with a cinnamon stick.
3. Makes 8 cups. This will keep for several days in the refrigerator and can be reheated in the microwave when you want to enjoy a cup. Your house will smell wonderful when this recipe is simmering in the crock pot.
