1. Place eight frozen burritos in a 9x13 baking dish and microwave on high for about 8 minutes.
2. While the burritos are cooking, make the smothering sauce by combining sour cream, green chiles, lime juice, lime zest, cumin, salt and pepper, and cilantro in a blender. Blend until completely smooth.
3. Once the burritos are done cooking and are warmed completely through, generously spread the smothering sauce all over the burritos and top with monterey jack cheese.
4. Put the burritos under the broiler to heat the sauce through and melt the cheese.

1. Heat vegetable oil in a medium saucepan over LOW heat. Whisk in the flour and cook, whisking constantly, for a minute or two until mixture is just beginning to get lightly golden brown. Whisk in the chicken broth, enchilada sauce, cumin, salt, and pepper. Increase heat to MEDIUM-HIGH and bring mixture to a boil. Reduce heat enough to keep mixture at a low simmer and whisk lightly until thickened. Remove from heat and set aside.
2. Combine chicken, sour cream, drained diced green chiles, and 1 cup shredded Monterey Jack cheese in a large mixing bowl. Season with salt and pepper.

1. Preheat oven to 350 degrees. Coat a 9 x 13 casserole dish and set aside.
2. In a bowl, combine the diced chicken, cream cheese, green chilis, 1 cup of shredded cheese, and salt. Mix well to combine. Scoop 1/6th of the mixture into the center of a tortilla and flatten slightly. Fold in sides of the tortilla and roll into a burrito. Place in the baking dish seam side down. Repeat with remaining filling and tortillas.
3. In a medium saucepan, heat the butter over medium heat until melted. Whisk in the flour and cook until lighly browned. Add in the chicken broth and can of green chili enchilada sauce. Bring to a simmer and cook for two minutes. Pour green chili sauce over the burritos and sprinkle on the remaining cup of cheese.
4. Cover baking dish with foil and bake for 30 mintues. Remove foil and bake for 15 mintues. Let sit for five minutes before serving.
