1. Place pork, soy sauce, vinegar, water, garlic, peppercorns, bay leaves, and optional jalapeño in the crock pot.
2. Cover and set to Low heat for 6 to 8 hours turning over half way through cooking.
3. Remove the pork, shred with 2 forks, and put it back in the crock pot for 1 more hour to let the flavor get into the meat.
4. Discard bay leaves and serve over rice and top with chopped scallions. Enjoy!
