1. Preheat a waffle maker to medium heat (2 or 3 setting if yours has one) and spray with avocado oil spray.
2. Add the rolled oats, applesauce, milk, lemon juice, vanilla extract and baking powder to a food processor or blend. Blend 1-2 minutes until smooth then remove and manually fold the blueberries into the batter by hand. The batter will be thick.
3. Add half the batter to the waffle maker and bake 4 minutes on each side until golden brown. Note, I have a double waffle maker so if yours is smaller than you will use less batter ~1/2 cup.
4. Carefully remove the waffle from the waffle maker and set aside on a wire baking rack or plate. Repeat step 3 to cook the remaining batter.
