This quick and easy migas recipe is made with eggs, salsa, onion, jalapeno and corn tortilla chips for a truly authentic Tex-Mex style breakfast taco. In a medium-large non-stick skillet over medium heat add oil, onion, bell pepper, and jalapeno. Saute for 5-6 minutes or until onions are translucent.
What makes Migas great is that they do not use many ingredients, are relatively quick and easy to make, and they make good use of leftover tortillas. And, obviously, they’re very delicious, too! What are Migas? Migas consist of crispy pieces of tortillas that are mixed with scrambled eggs. You can also add some diced vegetables to them.
Serve migas in corn tortillas that have been heat up in coconut oil over medium heat (optional) for 30 seconds per side. Top migas tacos with additional cilantro, chopped tomatoes, cheese, and avocado slices. Enjoy! How much salt you add depends TOTALLY on the type of tortilla chip you are using.
Migas, like many Mexican Breakfasts, are traditionally served with refried beans or plain cooked beans topped with some crumbled Queso Fresco, and some avocado slices on the side.
