In a medium bowl, whisk together the flaxseed meal, almond flour, cinnamon, baking powder, salt, and sweetener.
Mix and form little cookies and then place on a silicone baking mat or parchment paper covered baking sheet. Bake at 375 degrees F for about 8-10 minutes. This recipe made a batch of 12 sizable breakfast cookies. Personally I would eat two for breakfast. There are only 2.9g of carbs per cookie and 8.2g protein so to me that’s a decent breakfast.
Make ahead and store in the freezer for an easy low carb breakfast. Each egg muffin cup has 1.1g net carbs and 13.3g protein! Spray a muffin tin with non-stick cooking spray. Cut the sausage into 12 pieces and form into little cups in the wells of the muffin tin.
