Bierocks or Runzas, depending on where you are from, are a traditional German/Russian dish that is typically made with a slightly sweet yeast dough. In order to make these Low Carb/Keto Bierocks aka Runzas I replaced the traditional dough with the versatile and delicious “fat head dough.”
Runza Casserole is inspired by a world-famous sandwich made with ground beef and cabbage. This is a filling, delicious and affordable way to feed an entire family! Unless you are from the Midwest, you might not be familiar with the word RUNZA. What is a Runza?! Hmm, yes, it’s a very interesting word.
I used two slices of cheese for each. It was not only the perfect amount of cheese but it helped to keep them all the same size. This recipe is my family’s favorite. My husband grew up in Nebraska and always raved about Runza. When we traveled to Kansas to visit his family 3 years ago I had my first one and couldn’t get them out of my head!
