For the filling: I make the filling the day before I want to make the bierocks and cool it overnight in the refrigerator. Start by warming 1 tablespoon of the butter & avocado oil in a large pot over medium heat. Add the shredded cabbage, the onion, the ground beef and the salt and pepper. Break up the beef. Add the water and cover and cook over medium low heat for 30-40 minutes stirring occasionally. The cabbage should be wilted and the beef fully cooked through. Drain the mixture when it finishes cooking.
2. For the dough: Melt the mozzarella cheese and the cream cheese in the microwave for 1 minute, stir and put in for an additional 30 seconds. Mix well. In a food processor mix up 2 eggs, then add in the cheese mixture. Make sure the cheese is not very hot when combined with the eggs or you will cook the eggs. Once the cheese and eggs are fully mixed add all the almond flour. Process in the food processor until a dough ball forms. Remove from the processor and form into a disc. Cut the disc in half. Roll our half of the dough between 2 pieces of parchment paper to about ¼ inch thickness. Cut off the ends of the dough to make a large rectangle or square shape to work with. Save the scraps and re-roll those to make more! Cut the dough into square shapes, about 5 inches each. I was able to do 4 squares per roll with the first 2 halves and got 3 more from the scraps.
