1. Place the shallot, jalapeno and garlic in a food processor and pulse until finely chopped.
2. Heat the olive oil in a large saucepan over medium heat.
3. Add the shallot, jalapeno and garlic. Sauté, stirring frequently for 3 minutes.
4. Add the zucchini and broth and heat to a simmer. Lightly season with salt and pepper, then cook until the zucchini are soft, 15 to 20 minutes. Remove pot from the heat and allow mixture to cool slightly.

2. Trim the ends off the courgettes and slice them into chunks about 1cm thick. Place on a baking tray / roasting tin. Trim the ends off the leek and slice into rounds of a similar size. 4. Meanwhile, make up the vegetable stock with boiling water in a heatproof jug, then tip in the frozen peas and set aside to let them thaw.
