1. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Butter a medium casserole form. Wash and dry the red currants. Only remove the stems after cleaning them. Place them on the bottom of the prepared form.
2. Whisk the eggs, sugar, and vanilla extract until thick and pale, about 5 minutes. Sieve the flour over this mixture and fold it carefully. Sprinkle the flaked almonds on top and bake in the middle of the hot oven for about 20-25 minutes until golden.
3. Serve warm with vanilla ice cream, or cooled with whipped cream, vanilla sauce, or crème Fraiche mixed with brown sugar.
