1. In medium or large pot over high heat, add rice, cinnamon sticks, salt and water. Mix together and bring to a boil. Once boiling, cover and reduce heat to simmer. Cook for 15 minutes until most of the water has evaporated.
2. Add the milk, give it a stir, cover and cook for another 15 minutes, stirring occasionally.
3. Add the sugar, give it another stir, cover and cook for another 10 minutes, stirring occasionally.
4. Remove the lid, raise the heat to medium-high and cook for another 5 minutes or until the rice pudding has reached a thick consistency.

1. Place water, rice and the piece of cinnamon in a medium saucepan. Turn heat to high and bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, until rice is tender.
2. While the rice is cooking, mix the whole milk with the condensed milk and stir well.
3. The rice will be ready when all the water has evaporated and it has formed some holes over the surface like in the above picture.
4. Remove pot from heat. Pour the whole milk and condensed milk mix into the saucepan and stir. If you would like to add the raisins or vanilla extract, you can add them now.

2. Then, add 1/2 cup of the remaining milk, keep stirring. When the milk has been absorbed, add 1/2 cup more of milk, repeat the process one more time. You'll be adding 1/2 cup at the time, waiting until it is absorbed to add the next one. With the last ½ cup of milk, add the sweetened condensed milk; mix well to combine. Cook for 2 -3 minutes, or thicken to the desired consistency. Keep in mind that as the rice cools down, it will thicken even more. Turn off the heat.
3. Add butter and stir to incorporate.
4. Let cool uncovered until it reaches the desired temperature. You can serve it hot, warm, or cold. It's totally up to you!
