Combine coriander, cumin, garlic powder, annatto, salt, turmeric, Mexican oregano, and pepper in an airtight container and mix well. If you can't find ground annatto, use ground paprika. Mexican oregano is preferred but regular oregano works well, too. Use 1 1/2 teaspoons of this mix to equal 1 packet of commercial sazón.

Personally, I use my low carb taco seasoning in all of my Mexican dishes. I just love the flavor it adds! If you’re making a meat sauce for tacos, I’d recommend 2 tablespoons of seasoning per pound of meat. If you want to thicken up the sauce, try a low carb thickener like coconut flour with ground psyllium husks, xanthan gum, or guar gum.
