Stir in the pumpkin and the spices. Continue to stir over medium heat for about 10 minutes. Make sure the filling is not too watery; otherwise let it cook for a couple more minutes.
2. Mix the first 3 dry ingredients. Cut in the shortening with the dry ingredients. Works better if you use your hands. Add the eggs, milk and sugar. Continue to work in with your hands. Split the dough in half, wrap in plastic wrap and put into the refrigerator for about 20-30 minutes. Take out one half of the dough and split it into 12-18 balls of dough. Depending on how small you want your empanadas. I prefer one dozen per half of the dough. They also fit nicely on one large cookie sheet.
3. Preheat the oven to 350 degrees. You can fill your empanadas with any preserves made ahead of time.

Instead, flatten out the circle with a rolling pin on a sheet of parchment paper to prevent sticking and to make it easier to work with later on. You can refrigerate the flattened circles while you work if needed.
2. Start your filling by browning your ground turkey or beef with one tablespoon of the olive oil in a large skillet over medium heat. Once it has browned you can drain the meat and remove it from the skillet.
3. Return the empty skillet to the stove and add the remaining olive oil. Place the garlic in the skillet and cook for 2-3 minutes for the garlic to soften. Then add the tomato paste and seasonings. Cook this for an additional five minutes and then stir in the drained meat from the last step. Turn the heat down to low to low medium and cook until the ingredients have blended together- about five to eight minutes.
4. Add one to two tablespoons of the meat mixture (the amount depending on how big your circles are) to the center of each circle of dough. Do not overfill your circles. Fold the circle of dough in half. Use a fork or similar tool to flatten the edges together to keep the filling inside of the empanada while it bakes.
