DirectionsStep1Get your popcorn ready! You can either buy a bag of (salted!) buttered popcorn or pop your own. One batch of caramel is enough for 4 to 5 cups, depending on how coated you like it. Transfer to a lined baking tray a…Step2See video for how to whip up my keto caramel. The one difference will be that you'll be adding a touch of baking soda at the very end (for easier coating and a candy-like texture).Step3Add butter to a large dutch oven over medium/low heat and simmer, stirring every so often, until fully browned (about 5 minutes). (My top tip: I like to use salted butter for a salted caramel version!) Add i…Step4Simmer over very low heat for 15 minutes (don't stir at all!), taste for seasoning.Step5Note: if your caramel splits (too high temperature is usually the culprit!), you might still be able to save it. Remove it from the heat, allow the mixture to cool down for about 5 minutes, bring it back on the stove…Step6Mix in the baking soda into the caramel at the *very* end: it will bubble up rapidly (this is why we're using a larger dutch oven here), and immediately pour it over your prepared popcorn. Rapidly mix it for even coating wi…IngredientsIngredients5 cupsPopped Popcorn56 gramsGrass-Fed Butter (salted or unsalted)½ cupXylitol (or allulose)118 millilitersHeavy Whipping Cream¾ teaspoonKosher Salt (to taste, I omit if using salted butter)1 teaspoonBlackstrap Molasses (optional)¼ teaspoonBaking SodaNutritionalNutritional190 Calories11 gTotal Fat35 mgCholesterol6 gCarbohydrate163 mgSodium1 gProteinFrom gnom-gnom.comRecipeDirectionsIngredientsNutritionalExplore furtherSugar-Free Recipe for Caramel Corn : Recipes for Diabeticsyoutube.com10 Best Healthy Sugar Free Popcorn Recipes Yummlyyummly.comSugar Free Caramel Corn Recipe With Splenda - Share …share-recipes.net10 Best Sugar Free Caramel Corn Recipes Yummlyyummly.comKeto Caramel Popcorn {zero-carb} - Resolution Eatsresolutioneats.comRecommended to you based on what's popular • Feedback

WEBJan 10, 2013 · Ingredients. 1/3 cup unpopped popcorn kernels. ½ cup erythritol. 1 teaspoon honey, agave, or brown rice syrup (any liquid …

    1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat and set aside.
    2. Pop the popcorn kernel. (I do this very simply by throwing the kernels into a brown paper bag, folding over the top a few times, and microwaving for a few minutes until the popping slows down significantly.) Spread the popped popcorn in an even layer on the prepared baking sheet and set aside.
    3. Meanwhile, in a medium skillet, cook the erythritol over medium low heat, stirring constantly, until completely melted. Stir in your liquid sweetener of choice, and turn off heat. Quickly and evenly pour the melted erythritol mixture over the popcorn, being extra careful as putting ice on your erythritol caramel burns is probably not your evening activity of choice. Don’t worry if the mixture doesn’t cover all of the kernels completely; just do the best you can!
    4. Bake in the oven at 350 degrees for 20 minutes. Let cool before eating! There’s a happy medium of serving temperature here, folks. If it’s too cold, it might be a bit harder than would be ideal. If it’s too hot and you exhibit no patience, you will have no wear a rather striking shade of lipstick for the rest of the week to hide the burns. Consider yourself warned. Best if eaten the day it’s made, but will keep in a covered container in the fridge for up to a week.
