With 0.4 grams of net carbs per cookie, they are the perfect guilt-free indulgence. What makes this recipe even better is that it only uses 5 ingredients in the batter and comes together in minutes.
Add the nut flours and mix until everything is combined and moist dough forms. Roll the dough with your hands into about 1" (2.5 cm) in diameter balls and spread them out on the baking sheet. Flatten them a bit with your fingers and gently press down a hazelnut in the middle of each cookie. Bake in the oven for about 15-20 minutes until golden.
Between the flours, hazelnut does have more texture to it. That’s why, combined with the whipped egg whites, it produces such a soft and light cookie. So while almond flour and other nut flours can be used, just keep in mind that the final product will be slightly different.
Flatten them a bit with your fingers and gently press down a hazelnut in the middle of each cookie. Bake in the oven for about 15-20 minutes until golden. Let the cookies cool on the baking sheet for at least 30 minutes before removing them.
