There is a local place out here that makes pupusas stuffed with cheese, chicken, beans, beef, usually served with Curtido which is a fermented cabbage similar to a coleslaw. They’re really good and gave me the inspiration to try to make a keto friendly or low carb version which is what we’ve got here.

Ingredients in curtido: 1 cabbage 2 red onion 3 carrot 4 jalapeno 5 oregano 6 salt 7 vinegar More ...
Add cabbage to a large bowl. Add carrot, onion, jalapeno, oregano, and vinegar and toss well to combine. Marinate. Curtido tastes best after it has marinated for several hours or days, but you can enjoy it fresh if you’d like. Store curtido in a covered container or mason jar for up to 1 week in the fridge.
