2. Heat ghee and oil in a skillet a little over medium heat and add the cumin seeds. They will start to sputter. Immediately add the onion and sauté for 5-8 minutes, or until slightly golden. Add the garlic and ginger and continue to sauté until the raw smell disappears, or about 20 seconds. Add the tomatoes and cook until they're soft and the oil starts to leave the sides, about 5 minutes. Add a bit of water (if needed so the spices don't get burnt) and add the salt, paprika, red chili, and turmeric.

How to cook eggplant in punjabi baingan ka bharta?

Punjabi baingan ka bharta requires that the eggplant is roasted. This can be done in several different ways. The first is to roast it on a gas cooktop by just placing the eggplant straight on the burner and keeping the flame on low setting. Keep turning and cooking until all the skin on the eggplant is charred and the inner flesh looks really soft.

What is baingan bharta?

I have to say it is one of my favourite dishes of all times.” Baingan Bharta, translated to mashed eggplant, is a smoky eggplant (aubergine) curry popular in Indian and Pakistani (particularly Punjabi) cuisine. Traditionally, our ancestors would roast eggplants over an open fire or in a tandoor to get the skin charred all around.

What to serve with eggplant bharta?

Eggplant Bharta or Bhurta is truly a versatile dish. Serve it as an entree with piping hot roti, or top it on mini bite-sized naans to make for a unique party appetizer. Either way, you will have made a wonderful addition to your menu. Note: I love the bite-sized, mini Cocktail Flatbreads that are ideal for hors d’oeuvres and snacking.
